One of first dishes I had to make in culinary school was a classic omelette. I've made over 400 omelettes in culinary school so I've hence become one snotty omelette eater. Here are some places that were able to pass my snobby omelette test and get my seal of approval.

They know what to do with all the eggs in my basket (ie, get the eggs Benedict).
Their ricotta pancakes will cure your hangover and maybe all the other regrets from the night before. It gets packed at brunch time so just try to look put-together.
Thank goodness they opened one near my house, I'm way too cranky in the morning to drive far with a craving for eggs.
Wow, there needs to be more joints like this. Free wifi, great food, friendly atmosphere, and non touristy for Hollywood blvd.
