Cut 'Em Up: Portland's Best Butchers

Nose-to-tail eating comes standard at Portland restaurants. It's not unusual to see pigs feet, head cheese, fried ears, tongues, and plenty of other "weird" cuts on upscale menus around town. The truly adventurous eaters among us love to recreate these offal meals at home, thanks to these awesome butchers willing to fill those "special" requests (or just supply a damn good steak).
