In Short – Tojo's peerless reputation is seen from the accolades crowding the door to the long wait on weekend nights for a seat at the bar. The buzz is largely due to Tojo Hidekazu, the beaming owner/chef behind the sushi counter who ministers to the appetites of his intensely loyal patrons. His menu includes traditional Japanese items--edamame, teriyaki, tempura--but customers who put their faith (and credit cards) in Tojo's deft, fish-slicing hands will walk away happiest.

Chopstick Licking Good

Where do I start! Tojo's was Chopstick Licking Good! By far the best Sushi Restaurant in North America. I've eaten at all of the Nobu's in America as well as the best of the best in LA, NYC, and SF. The experience that I just had at Tojo's not only raised the bar for sushi, it has raised the bar for an entire dining experience. I was only a single and I booked in for the Sushi bar a week in advance, knowing from former reviews that if I wanted the best the sushi bar was the place to get it. Tojo, though I had never met him, was easily distinguishable with his balding head and conductor like control of the movements of his fellow sushi chefs. Just a few minutes after ordering a Asahi tall I was greeted by none other than Tojo asking me if I had any food allergies, what I was drinking and even asked where I was from, as well as explaining how everything was fresh and prepared for the individual. He wasn't kidding. Over the next 90 minutes ensued the following:
1.) Local Tuna in Bamboo Serving Bowl (melted in my mouth)
2.) Scallop Stuffed Mushrooms (amazing look and presentation and served hot)
3.) Pacific Octopus - Tender and tasty
4.) Smoked Sable Fish (AKA Black Cod) in broth - amazing and served hot again
5.) Hand Roll - Giant Clam - yum
6.) Shrimp/Salmon/Tuna/Scallop w/ Salmon Roe on top - I could eat these for each meal of the day
7.) Bluefin Toro Sushi, Bluefin Sushi, Whitefish Sushi
8.) Special Roll - Mango, Avocado, Asparagus, Salmon - all wrapped in rice and cucumber
9.) Pineapple Ginger Sorbet with Raspberry and Sesame Seed cracker
9 courses! I wrote them all down because I couldn't believe how good each one was! Amazing! If you're in Vancouver and you like sushi you must go to this place. The above menu is the omasake - Tojo's choice - I didn't order anything and it cost $188.50 with two beers. Enjoy it all!
