Open Late = Old Dough – I was stranded late one night on Mass Ave. in Cambridge and was looking for a bite to eat. I saw the sign for this place and it looked like it would be more traditional than your ordinary pizza chain. While I was deciding what to order, one of the two Middle Eastern guys working there said I could just order it by the slice, "that one has mushrooms." I looked at the sliced pizzas and they definately looked dry and cold. Thinking I was getting better quality, I ordered my own large pizza with pepperoni and mushrooms. I am a big fan of mushrooms on pizza. My pizza went through the oven in about ten minutes. After this time I observed the man pushing my pizza back in the oven and checking up on it every couple of minutes and pushing it back in again. My conclusion: the crust would not brown and was not rising well because it was old dough. I've worked at two pizza resturants. These are common indications that the dough has become inactive and should not be used. The fact that it was late at night was no excuse. Fresh dough should be made everyday. It's only good for 24 hours under refridgeration. Anyhow, I recieved my pizza after about 20 minutes, double the time quoted. At the first look I was detested that the mushrooms were not sliced with a certain amount of thinkness and order, but rather diced into small sections. Because the dough never cooked the crust was yellow and soggy. It tasted like I was eating my pizza off of a biscuit. ($15 ):
