Sometimes, good thing really do come to those who wait. And wait we did, as the Trenchermen teased us for more than a year with parties, events and beautiful photos of their food. The Wicker Park restaurant, from brother chefs Patrick and Michael Sheerin, is finally open, and we must grudgingly admit that it was worth the long wait. The former bathhouse has been converted into an epic bar and a beautiful dining room, and the food is pretty enough to match the space. Every dish has an unexpected, yet wonderful, twist. "Noodles" are actually made with cuttlefish and combined with pickled watermelon and garlic. Salmon is coated in a powder made with black sesame seeds and dehydrated black olives, giving the fish a smoky-sweet edge. Even the duck breast isn't ordinary - it's hung to age and then cooked for hours sous vide. To finish your meal? Try a glass of Malort, the classic (and unloved) Chicago spirit - the Sheerins have it on tap.
