Thank goodness for backers: When Ning Congla cooked for her boyfriend, he was so amazed by her plates that he insisted she open a food trailer. He put his money where his mouth was too, and financially helped her turn said suggestion into a reality. Now operating out of south Austin's latest food trailer court, the South Lamar Trailer Bazaar, Trai Mai Thai has won over the taste buds of many people not romantically involved with the chef: Long lines form at lunchtime and dinner for Thai curries, pineapple fried rice, and pad cashew chicken. Trai it!

This place has a sweet backstory: The owner's boyfriend was so impressed with her cooking, he demanded she open a food trailer (and forked over the money to help her). Several months later Trai Mai Thai opened, and its menu offers hearty portions of Thai soul food: Pad Thai, Green Curry, Red Curry. Did we mention they serve free beer? Seriously.

If you pay attention to no other review about this place, may it be this one. "Why?" You may ask. Because I worked there for one day. "Why one day?" You may also query. That leads me to my review and why I left.

This kitchen/trailer is probably one of the filthiest places I've ever cooked in. I have a culinary background and was trained as a chef by the U.S. Navy. During that training we really emphasized cleanliness and keeping food free from FBI (Food Borne Illness). I am very surprised that this place is still open. In addition to the filth, the food was stored very poorly and at improper temperatures. Vegetable were being prepared on cutting boards that were just used for raw meat without being properly cleaned. Not to mention that raw meat should NEVER share a cutting board with vegetables in a professional kitchen.

The deep fat fryer had oil in it that was so old and dirty, I am surprised that it did not catch on fire.

I saw reviews about meat portions being poor. This is because their recipes actually have no measurable serving sizes. It is all contingent upon whatever haphazard handful that the poorly trained employees grab at the time.

Raw meat was left out at room temperature way too long to prevent bacteria growth.

And if this was not enough to keep you from patronizing this place, here is the kicker. The poorly trained, off-the-books, cash employees who make $8/hr don't get to keep their tips. If you walk up to the window and put a dollar in the jar it is fine, but if you use a credit card or order online, THE DIRT BAG OWNERS KEEP THE TIPS!!! Who the hell does that?

Shame on this place. Shame on the owners. Do the right thing and keep away. After only one day I was smart enough to do so.
