Excellent Food in Salt Lake...for real! – I moved here some time back after living in Germany, Scotland, Texas, Colorado, Washington, California and Alaska. I've eaten at some of the finest restaurants in the world French Laundry, Fat Duck, Alinea, Le Bec Fin, Restaurant Dieter Mueller, even Commander's Palace back in the day. Conversely, I eaten around Utah for years and it is fair to say the Utah is catching up with the rest of the world, but is still light years (culinary) behind everyone else.
Forage is not on the world level, but it is at least one of the best (next to Takashi) Salt Lake has seen to date. The food is artfully displayed and the flavors do have impact. The very small independent restaurant at least tries to bring a glimpse of what is going on outside the Zion curtain. The place is expensive because they are working with very expensive products. I can guarantee that the owners are not getting rich by offering such great fare. This is a labor of love they have with cooking. I just hope it's not too much too soon for Utah diners.
Go, taste and savor the difference between professionals and 63rd Cheesecake Factory put up near your house last week.
On another note...these guys blow the New Yorker out of the water which is really rehashed fare from the early 80's. The best chefs in Salt Lake do not belong to chains! Get out there and support these guys so fine dining isn't considered Red Lobster in the Salt Lake Valley.
