Having steadily built up a reputation for artisanal meats on the farmer's market circuit, the boys behind Salt and Time were ready to try a brick and mortar. The result is gorgeous -- seriously, this may be the prettiest butchery you've ever seen -- and the selection which includes more than meat, is equally impressive. Founded by one former vegan and his ethical meat-minded sidekick, Salt and Time serves lunch and brunch in addition to raw beef and pork cuts, with creative offerings they create from their own farmer's market trips. I tried the kale and onion bread pudding for brunch recently, and it was divine.

For charcuterie plates, there's nowhere better. Salt and Time arose out of two chefs' mutual passion for well-raised, well-cured meat, and began as a farmer's market operation, selling magical little packages of pastrami and salami. Now that it's a brick n' mortar with proper meal and bar menus, it's become a go-to for the elite carnivores among us.


Craft butchery in America doesn't get much better than this lovingly tended Austin meat store, whose principals are rediscovering meat arts that were dead before they were born. Don't miss out on the house-made hams and salamis, either; they are the place's proudest boast.
